After arriving in New Zealand in 1992, and a short stint in Wellington, Chef Hughie and partner Amanda moved north, landing positions at the prestigious Kimberly Lodge in Russell.
They established the iconic Waikokopu Café, set in the National Treaty Grounds at Waitangi and after a 15 year tenure, moved into the education sector.
Currently working at Whangarei’s Northtec as a Chef Tutor, Hughie is still hands-on in the industry having launched Waikokopu Caterers on the back of their successful café.
Hughie joined the NZ Chefs Association in 2006 immediately getting involved with judging at the National Culinary Fare and subsequent NZ Hospitality Championships, mentoring College teams to competition level, sitting on the executive committee of Northland Chefs and as a National Executive member. Hughie has been Deputy Salon Director and Salon Director of the Northland Salon Culinaire.
Hughie is also the founder of the Kiwi Kids Can Cook initiative. Since 2006, this innovative platform has showcased the talents and creativity of kids aged 7–12 around New Zealand and has encouraged them into the kitchen and onto the competition circuit.
