Inflight Catering Menu Development Manager, Auckland

We deliver more than 27,000 meals per day across the world, which means you will be busy making sure that all the communications to our caterers and suppliers are run smoothly!

We are looking for an experienced qualified culinary chef or passionate culinary professional with menu design and technical acumen to join our high performing team. This is a unique and creative role where you will execute your knowledge in menu design to enhance customer satisfaction and to deliver maximum value to the airline.

You will be responsible for menu creation, budget control, detailed specifications, relationship building and enhancing the customer experience through our food.

Your main responsibilities might involve:

  • To participate in the strategic and operational business planning and execution of initiatives
  • To provide direction, focus, establish priorities and communicate expectations to Caterers to ensure delivery to service levels, contracts and food safety regulations and standards.
  • To support the Inflight Catering Manager in the creation of a cohesive and aligned food service strategy
  • To manage successful outcomes from menu workshops and menu presentations through agreed specifications and commitments with Caterers, which include quality and financial targets
  • To seek out, quantify, and develop opportunities for process improvement
  • To work within set budgets, forecasts, menu variance analysis and meal costings to ensure accurate and timely data is available and utilised in making the best decisions for the business.
  • To negotiate competitive meal costs based on economic modelling to ensure the best possible meal pricing for the Operations Delivery team.

Please note travel is part of this role to represent Air New Zealand. This will involve travel across our network to meet with our offshore suppliers and contractors. A proven ability to network and continually enhance relationships with key internal teams, caterers and suppliers is vitally important, so an open collaborative approach is essential.

Speed and attention to detail are key for this role as you will also be required to act quickly. You will require to have high levels of resilience and energy with a strong drive to achieve.

Your challenge will be to establish yourself in this complex role, meet tight deadlines and learning a new culinary approach associated with Air New Zealand's food and product offering.
